Rosemary Leaves
Rosemary Leaves, Rosmarinus officinalis, from mint family. They have a tea like fragrance and a pungent, slightly bitter taste. There are three types of rosemary whole, cracked and ground. Generally used sparingly, dried or fresh, to season foods. Particularly lamb, duck, chicken, sausages, seafood, stuffings, stews, soups, potatoes, tomatoes, and vegetables.
In ancient times rosemary where believed to strengthen the memory. Its fragrant oil is an ingredient in numerous toiletry products and in vermouth.
It is native to the Mediterranean region, rosemary needles have naturalized throughout Europe and America. Widely grown in gardens in the warmer parts of the U.S. and Great Britain in gardens. Where an old garden legend reads “where rosemary thrives the mistress is master.”
