Annatto Powder
Annatto Powder (Bixa orellana), is produced by trees native to the New World tropics and the only species of the family Bixaceae. \It is widely used in Latin America and the Caribbean cuisines as both a coloring agent and for flavoring. Central and South American Indians used the seeds to make a body paint, and as a lipstick. Due to these uses, it is also often called the Lipstick Tree.
Used to impart a bright golden color to oils, rice dishes and meats, Annatto powder also imparts a piquant flavor to your dish. Although Annatto makes a lower cost substitute for saffron’s golden coloring, it is not a substitute for saffron’s flavor.
Most notably, Annato is used in achiote oil and paste as well as adobo paste. These pastes and oils add an earthy peppery flavor to your dishes. When mixed with other spices and herbs it imparts a smoky flavor to meats, fish and poultry.
Both seeds and ground Annatto will keep for a long time. With proper storage, it can be good for up to three years.
