Juniper Berries
Juniper Berries, any of about 70 species of aromatic evergreen trees. Shrubs constituting the genus Juniperus of the cypress family distributed throughout the Northern Hemisphere. The reddish brown or bluish cones are fleshy and berrylike. Often have a grayish, waxy covering. They mature in 1 to 3 seasons and contain 1 to 12 seeds. Common juniper a sprawling shrub.
The fruit, or berry, of this species is flavor to foods and alcoholic beverages. Particularly gin, a liquor which is was made in 17th century. Juniper berries have a fragrant, spicy aroma and a slightly bittersweet flavor. Used with venison, they remove the gamy taste. The berry season sauces and stuffings, in pickling meats, and to flavor liqueurs and bitters.
