Summer Savory
Summer Savory (species Satureia hortensis), aromatic annual herb of the mint family (Lamiaceae). To flavor many foods are the dried leaves and flowering tops, particularly poultry and stuffings. The plant is found in many other vegetables, salads and is a popular ingredient in herb bouquets. The dried leaves are greenish brown and have a fragrant aroma and a warm, slightly sharp taste. Also called Savory Herb, Savory Spice, Garden Savory and the Bean Herb.
Savory grows well in warm climates and native to the Mediterranean region. The ancient Greeks and Romans used it blended with thyme for flavoring game and stuffings. In the time of the Caesars, the Romans brought savory to Britain. The colonists brought it to America, and it is a favorite seasoning in the United States. Winter savory, or dwarf savory, is Satureia montana, a smaller sub shrub that flowers in winter.
